A CULINARY ADVENTURE IN UMBRIA
ITINERARY
Day 1
· Transfer from the Rome Fiumicino Airport to Palazzo Seneca in Norcia.
· This afternoon, enjoy a welcome drink and a short presentation on your cooking course.
· This evening, enjoy a dinner at Ristorante Vespasia of Palazzo Seneca.
Day 2
· After breakfast, your introduction to Umbrian cooking gets underway with your first cooking class.
· Lunch based on your efforts.
· In the afternoon a black truffle hunt. (During the months of May & September another activity will be substituted.)
· Dinner tonight will be at Granaro del Monte restaurant.
Day 3
· After breakfast, depart for an excursion to the legendary Assisi, the city of Saint Francis (with guided visit).
· Lunch on your own.
· Afterward, it’s on to the famous town of Montefalco, land of the Sagrantino red wine, and a visit to a local winery where we will be invited to taste wonderful wines.
· Return and dinner at Ristorante Vespasia this evening.
Day 4
· Breakfast, followed by your next cooking lesson.
· Lunch based on your efforts.
· In the afternoon visit some local producers (cheese, prosciutto, sausages & salami).
· Dinner at Granaro del Monte restaurant this evening.
Day 5
· After breakfast, the next cooking class with lunch based on your efforts.
· For those on the 4-night program, departure and transfer to Rome airport after lunch.
· For those on the 6-night program, in the afternoon, visit Spoleto, a bronze-age town located on the slope of a sacred mountain in the Apennines. Just one of their numerous ancient Roman and medieval sacred sites is the Duomo, which is home to Filippo Lippi’s last fresco cycle.
· Return to the hotel. Ristorante Vespasia for dinner.
Day 6
· Breakfast followed by your final cooking lesson.
· Lunch to follow based on your efforts.
· Afternoon at leisure. At an additional cost, you will have the optional opportunity to shop for cashmere (Umbria is well known for its production of cashmere). Alternatively, you might want to visit a shoe outlet. Either of these optional excursions can be requested locally.
· Tonight’s dinner will be at Ristorante Vespasia.
Day 7
· Breakfast at the hotel, final farewells and depart for your transfer to Fiumicino Airport in Rome.

About the Location:
Norcia, a town famed for its black truffles, its nestled in the center of the region of Umbria, completely enclosed by its 14th century walls and surrounded by the Monti Sibilllini Park. With a great culinary history, the town is known for its lentils, sausages, cheese, as well as the truffles. The region is rich with culture, Renaissance art, wine and gastronomy, as well as hand-crafted products.
Spend six magical nights at Palazzo Seneca, a hotel in an Umbrian palace. This charming residence dating back to the sixteenth century is located in the heart of Norcia, and has recently been fully restored. The fusion of design and tradition, simplicity and quality, is the secret of this elegant project realized by Vincenzo and Federico Bianconi, the latest generation of a family who has been offering hospitality and food service since 1850. The skilled restoration, the research of unique materials and objects, along with the work of the best Umbrian craftsmen, have made Palazzo Seneca a unique destination in its genre.
About the cooking lessons: Learn the secrets of Umbrian cooking using ingredients such as black truffles from the territory of Norcia, lentils from the plateau of Castelluccio, lamb provided by local farms situated in the Monti Sibillini National Park, Chianina beef from a pasture in the Visso area, pork from a small farm in Pieve Torina, Salumi prepared by a small producer according to the local tradition, one-year-old pecorino cheese matured in a cellar, and fresh ricotta cheese from a local producer. Classes are held either in the original house of the Bianconi family, or in the beautiful, well-equipped kitchen of the Vespasia Restaurant. Your instructor for the week, Chef Flavio, gives classic Umbrian recipes a modern and delicious touch. He has worked in many prestigious restaurants around Italy, such as ‘Al Palazzo,’ (one Michelin star), ‘I Vechhi Tempi,’ and ‘La Frasca,’ (two Michelin stars), and has had many years of experience as a culinary teacher.

April 25 - DAY 1
Depart Philadelphia on an overnight trip to Rome on a non stop flight on US AIR
April 26 - DAY 2 - Rome
Arrive at Rome's international airport where we are met by our English speaking Select International Tours guide. Transfer to your hotel with a stop at St. Paul Outside the Walls for Mass. Settle into your hotel and have an afternoon at leisure and time to become acclimated to a new time zone. Tonight we enjoy a walking tour of "Baroque" Rome, visiting the Spanish Steps, Trevi Fountain, Piazza Navone and the Pantheon. Overnight Rome. (D)
April 27 - DAY 3 - Papal Audience and CHRISTIAN Rome
This morning we attend the Papal Audience at the Vatican, and then embark on a sightseeing tour of Christian Rome which includes: the Basilica of St. Mary Major, one of the oldest shrines dedicated to the Blessed Virgin, a shrine that contains a relic from the manger of the infant Jesus; the Holy Stairs, the Basilica of St. John the Lateran, The Basilica of the St John in Lateran, is the former residence of the popes prior to their return to Rome in 1377; and Holy Cross in Jerusalem to see relics of the Holy Cross. April 28 Day 4 - Rome/Assisi/Rome
Depart to Assisi for a full day tour. Upon arrival take a guided tour to see San Ruffino Church where St. Francis and St. Clare were both baptized. Also visit St. Clare Church to see the cross that spoke to St. Francis and led him to a life of piety. Celebrate Mass at St. Francis of Assisi and visit Santa Maria degli Angeli. After Mass there is free time to stroll this charming village with its quaint shops. Return to Rome this evening for dinner and overnight. (B, D)
April 29 Day 5 - Rome- VATICAN MUSEUM and CATACOMBS
After breakfast enjoy a visit of the Vatican Museums, a group of most impressive edifices with hundreds of galleries filled with art treasures. See awe-inspiring relics and works of art donated throughout centuries as tributes of faith. We'll cover the Tapestry Gallery, the Raphael Rooms and the most overwhelming Sistine Chapel, Michelangelo's Masterpiece, restored mural of the Last Judgment. Later, enter the largest church in Christendom St Peter's Basilica, built on the site where St Peter was martyred. Unsurpassed in beauty, a monument to the long history of the Catholic Church, to which pilgrims come from around the world, St Peter's is the grandest of the world's churches. Marvel Pieta and Bernini's amazing bronze canopy. We will also visit the grave of Pope John Paul II located at the Vatican. In the afternoon we travel the Appian Way , the oldest road from Roman times, plus the famous Domino Quo Vadis Chapel; see the ancient Baths of Caracalla, Arch of Drusus; Tomb of Celilia Metella, and the catacombs of St Callixtus where the early Christians hid themselves to escape persecution. April 30 Day 6 - Rome- Ancient ROME
This morning we enjoy an Ancient Rome tour, visiting the Colliseum, the Mamertine Prison and other famous landmarks. Afternoon is at leisure. Overnight Rome. (B)
May 01 Day 7 - BEATIFICATION AT THE VATICAN
Today we make our way to the Vatican where we will be present for Ceremony of the Beatification of Pope John Paul II. Afternoon at leisure. Tonight we have a gala farewell dinner in a restaurant with wine and music. Overnight Rome. (B, D)
May 02 Day 8 - Rome- Philadelphia
We bid farewell to our new friends and to a pilgrimage which will be in our memories and heart for a long time to come. Arrivederci Italia! (B)
