ITINERARY
Day 1 Arrive Miami. Fly to Miami for a briefing and welcome reception before an overnight at the Marriott.

Day 2 Miami to Cienfuegos or  Camaguey / Sancti spiritus. Depending on your departure day, you will fly to Cienfuegos or Camaguey. In Cienfuegos, enjoy a performance by the Cienfuegos Choir, or head to the Camaguey Ballet Company, meeting the dancers and talking to them about new productions. Interact with spirited vendors who line the atmospheric squares of these cities. Overnight in Cienfuegos or Sancti Spiritus. (D)

Day 3 Trinidad See the ruined hulls of sugar estates in the Valle De Los Ingenios, and chat with villagers while enjoying a glass of cold sugar cane or mango juice. Experience Trinidad like a local, visiting with shop owners and sampling local fare. At Casa Del Alfarero Santander learn about traditional pottery techniques. Stroll through town, with the chance to visit a music club to mingle with the locals and enjoy authentic Cuban music. Spend two nights at Hotel Ancon or similar. (B,L,D)

Day 4 Topes De Collantes /  Trinidad Head into the mountains of the Topes de Collantes National Park. Join a local naturalist for a nature walk, finding endemic birdlife. Enjoy lunch in a local restaurant before stopping in at a coffee house. Visit a modern art museum before dinner in a paladar, a privately owned restaurant. Sit down with local families to discuss daily life before being invited into their homes. (B,L,D)

Day 5 Trinidad / Zapata Wetlands / Bay of pigs Join Orlando Ramirez, a local farmer,for  a hike to observe the world’s  smallest bird, the bee hummingbird.  On the Bay of Pigs, discuss the  importance of the Zapata Wetlands  with a local environmentalist before visiting the Playa Giron Museum. Spend tonight at Hotel Playa Larga or similar. (B,L,D)

Days 6 & 7 Soroa & Vinalales  At the Korimakao Project, meet some of Cuba’s finest musicians, dancers and artists and discuss the power of art in the lives of ordinary Cubans. During a stop at a tobacco sorting factory, chat with the women preparing tobacco to become cigars. Enjoy chances to meet families working the land while visiting an organic farm, a local tobacco farmer and the private Maria Lezcano Garden. Spend two nights at Villa Soroa, Los Jazmines or similar. Day 8 Soroa & Vinales / Havana    Survey an orchid garden with staff from the University of Pinar del Rio. Meet local naturalists, business owners and farmers in the planned “green” community of Las Terrazas. Stop at Cafe de Maria for a cup of locally grown coffee and chat with the family who runs the business. Pay homage to Hemingway by discussing his work with specialists at his former home Finca Vigia. Notes:

The flight from Miami to Havana typically leaves from 9:00 am – noon on Day 2 of the program.  The return flight from Cuba to Miami can be as late as 6:00 pm so an overnight on the return may be a good idea.  If not, then connecting flights from Miami to your final destination should be after 8:00 pm just in case the flight gets back to Miami late afternoon.

En mi pueblo algunos dicen que... siempre ve más el que más sabe. Aquí les comparto unas curiosidades del mundo de viajes. ¿Sabias que? …

La Torre Eiffel

Entre los monumentos franceses más conocidos esta la torre Eiffel, una mezcla de hierros que domina la gran metrópolis y que es auténtico símbolo de la ciudad. Uno de los lugares de Europa más concurridos con más de 4.500.000 de visitantes al año. Pero... ¿sabrá usted que la torre estaba inicialmente condenada a desaparecer, o que la altura de la torre es diferente si la visita en verano o en invierno? La torre Eiffel se levantó para conmemorar la Exposición Universal de 1889. Estaba prevista ser desmantelada tras 20 años de explotación. Sin embargo, el éxito de la construcción fue tal que finalmente se decidió no derribarla. Su construcción se adjudicó a Gustave Eiffel quien fue elegido entre los más de 700 proyectos presentados. Su altura inicial era de 312 metros, y fue el edificio más alto en aquel momento, actualmente, tras la colocación de una antena de televisión en 1957 su altura es de 320 metros. Además de ser un centro turístico la torre posee otras muchas curiosidades que la hacen ser una estructura muy peculiar. Por ejemplo, la torre aumenta de altura hasta en 15 centímetros debido al calor a causa del  ensanchamiento del metal. La torre llega a oscilar con el viento hasta 18 centímetros en su cúspide, sin embargo su nivel de tolerancia sin peligro puede alcanzar hasta los 70 centímetros e incluso más. Cada siete años es pintada y se necesitan para hacerlo más de 40 toneladas de pintura. Este sobrepeso ha hecho que, con el tiempo, haya habido que rebajar su sobrecarga retirando algunos elementos de la estructura para compensar. El color de la pintura es marrón y posee un color más claro en la parte superior para darle un mayor sentido a la apariencia. Su diseño tiene unas características tan especiales que un modelo a escala de 30 centímetros de altura pesaría tan solo 7 gramos, es decir, lo mismo que una hoja de papel. ¿Curioso verdad?

La Torre de Londres

Situada junto al puente levadizo sobre el río Támesis encontraremos uno de los principales atractivos de la capital británica la famosa Torre de Londres.

Pero, ¿sabía usted que detrás de esta torre se esconden secretos, leyendas, joyas y algunos de los episodios más negros de la historia de Gran Bretaña? La Torre de Londres, a pesar de su nombre, no es una torre sino todo un castillo medieval situado en pleno centro de Londres. Se encuentra junto al “Tower Bridge”, el famoso puente levadizo que cruza el Támesis.  En 1066 se construcción comenzó, por mandato de Guillermo el Conquistador, y a lo largo de la historia ha servido como palacio para reyes, fábrica de armas, y hasta prisión. Donde estuvieron encerrados miles de prisioneros incluyendo reyes y reinas e incluso Rudolf Hess, el lugarteniente de Hitler que permaneció aquí en 1941 durante cuatro días antes de su traslado. El castillo llegó a albergar incluso hasta un zoológico. Fue el rey Enrique VII el que designó que la guardia de la torre fuesen los alabarderos de la casa real, llamados Yeoman Warders o Beefeaters. Desde entonces, un destacamento de ellos guarda celosamente la Torre. Sus muros vieron muchos condenados a muerte, como es el caso de Ana Bolena, que fue la segunda esposa de las seis que tuvo el Rey Enrique VIII, ella fue acusada injustamente de infidelidad al rey, y decapitada en la Torre. En la llamada “Bloody Tower”, la Torre Ensangrentada, que data del 1225, se conserva todavía el hacha y el tajo de ejecución. También el lugar  donde se guardan las famosas Joyas de la Corona Británica, “The Crown Jewels”.  Curiosamente, siempre ha habido cuervos en la Torre, que en su momento se alimentaban de la putrefacción de los ajusticiados, y que todavía siguen allí pese a que los tiempos han cambiado. Existe una leyenda que dice que el día que deje de haber cuervos entre sus murallas, caerá la Torre y junto a ella la monarquía inglesa junto con el imperio británico. Es por ese motivo que se dice que, para evitar que los cuervos se marchen del recinto, se les recorta las alas a algunos de ellos para que sirvan de reclamo al resto y de manera que la monarquía y el imperio británicos no corran peligro y sigan en pie. La Torre de Londres no es solo un emblema de la monarquía y el Imperio Británico si no también uno de los símbolos turísticos de Londres y, por tanto, uno de los lugares más visitados de la ciudad.

Lago de Tovel, Italia.

El lago de Tovel se encuentra en las montañas Dolomitas, al norte de Italia, y posee unas características muy especiales ya que, aunque parece un lago absolutamente normal, no lo es. Durante la primavera y cuando las condiciones meteorológicas le son favorables, sus aguas se tiñen de un rojo intenso que contrasta con el verde de la vegetación circundante. Sin duda una curiosidad muy peculiar que merece la pena conocer. Las Dolomitas son el nombre que recibe la cordillera de los Alpes en el norte de Italia. Son montañas espectaculares que alcanzan alturas que superan los 4.000 metros de altitud. A los amantes del ciclismo reconocerán algunos de sus pasos con nombres tales como Paso Tonale, Estelvio, Mortirolo o La Marmolada.  En las montañas Dolomitas de Brenta, cerca de la ciudad de Trento,  se encuentra el Parque Natural de Adamello-Brenta donde hay enclaves de gran atractivo como El Val de Génova, la Cascata de Nardis, Campo de Carlomagno y un lago de pequeñas dimensiones protegido por gargantas salvajes: es el lago di Tovel, un lago muy particular. Este pequeño remanso de agua está en un marco muy atractivo, sin embargo, tal vez no merecería ninguna atención especial sino fuese por un fenómeno curioso que se da en muy pocos lugares del mundo. Durante la mayor parte del año sus aguas son azules, pero hay una época en que sus aguas adquieren un intenso color rojo. Este fenómeno se produce a finales de primavera y en épocas de fuerte calor ya que en el agua existe un alga microscópica que adquiere un intenso tono rojo cuando el ambiente es el adecuado. En esa época el agua adquiere un fuerte color rojo debido a la presencia de las algas. El cambio de color empieza por la orilla y en pocos días cubre toda la superficie ofreciendo un espectáculo realmente inusitado.

El glaciar Perito Moreno.

El llamado glaciar del Perito Moreno es uno de los atractivos más impresionantes de la Patagonia Argentina. ¿Sabe a qué debe su nombre?, ¿Conoce por qué este glaciar es tan especial y espectacular? El glaciar perito Moreno es, junto con las cataratas del Iguazú, una de las principales bellezas naturales de Argentina. Sus características únicas y la espectacularidad del paisaje que lo rodea, atraen a miles de turistas de todo el mundo cada año. El glaciar es uno de los más importantes de los trece que posee el Parque Nacional de los Glaciares. Se trata de una increíble pared de hielo que se extiende a lo largo de un profundo valle. Su frente tiene más de 60 metros de altura y 5 km. de largo. En su avance la masa de hielo atraviesa el Canal de los Témpanos obstruyendo el drenaje del brazo Rico. Este tapón hace que el nivel de las aguas se eleve hasta 19 metros por encima de su altura normal, como si fuese una enorme presa. Cíclicamente, las aguas contenidas en el brazo Rico, ejercen la suficiente presión para quebrar la muralla de hielo de más de 60 metros de altura y se desbordan sobre el lago con un enorme estruendo. Esta ruptura de la masa de hielo es de una gran espectacularidad y miles de turistas aguardan expectantes durante muchos días el momento justo en que se produce el impresionante espectáculo. Dice la leyenda, es este el momento en que los viejos dioses indios dejan oír su voz. El Perito Moreno recibe su nombre de Francisco Pascasio Moreno, uno de los más importantes viajeros argentinos. Recorrió gran parte de la Patagonia Argentina y, debido a sus conocimientos, fue nombrado perito geográfico en la determinación de los límites fronterizos con Chile. Como detalle final, no exento de ironía, habría que señalar que Francisco Pascasio Moreno murió en 1919,  pobre y olvidado. Triste final para un viajero que dio nombre a una impresionante masa de hielo que  crea uno de los espectáculos más extraordinarios que podemos contemplar en la naturaleza.

Day 1

· Transfer from the Rome Fiumicino Airport to Palazzo Seneca in Norcia.

· This afternoon, enjoy a welcome drink and a short presentation on your cooking course.

· This evening, enjoy a dinner at Ristorante Vespasia of Palazzo Seneca.

Day 2

· After breakfast, your introduction to Umbrian cooking gets underway with your first cooking class.

· Lunch based on your efforts.

· In the afternoon a black truffle hunt. (During the months of May & September another activity will be substituted.)

· Dinner tonight will be at Granaro del Monte restaurant.

Day 3

· After breakfast, depart for an excursion to the legendary Assisi, the city of Saint Francis (with guided visit).

· Lunch on your own.

· Afterward, it’s on to the famous town of Montefalco, land of the Sagrantino red wine, and a visit to a local winery where we will be invited to taste wonderful wines.

· Return and dinner at Ristorante Vespasia this evening.

Day 4

· Breakfast, followed by your next cooking lesson.

· Lunch based on your efforts.

· In the afternoon visit some local producers (cheese, prosciutto, sausages & salami).

· Dinner at Granaro del Monte restaurant this evening.

Day 5

· After breakfast, the next cooking class with lunch based on your efforts.

· For those on the 4-night program, departure and transfer to Rome airport after lunch.

· For those on the 6-night program, in the afternoon, visit Spoleto, a bronze-age town located on the slope of a sacred mountain in the Apennines. Just one of their numerous ancient Roman and medieval sacred sites is the Duomo, which is home to Filippo Lippi’s last fresco cycle.

· Return to the hotel. Ristorante Vespasia for dinner.

Day 6

· Breakfast followed by your final cooking lesson.

· Lunch to follow based on your efforts.

· Afternoon at leisure. At an additional cost, you will have the optional opportunity to shop for cashmere (Umbria is well known for its production of cashmere). Alternatively, you might want to visit a shoe outlet. Either of these optional excursions can be requested locally.

· Tonight’s dinner will be at Ristorante Vespasia.

Day 7

· Breakfast at the hotel, final farewells and depart for your transfer to Fiumicino Airport in Rome.

About the cooking lessons: Learn the secrets of Umbrian cooking using ingredients such as black truffles from the territory of Norcia, lentils from the plateau of Castelluccio, lamb provided by local farms situated in the Monti Sibillini National Park, Chianina beef from a pasture in the Visso area, pork from a small farm in Pieve Torina, Salumi prepared by a small producer according to the local tradition, one-year-old pecorino cheese matured in a cellar, and fresh ricotta cheese from a local producer. Classes are held either in the original house of the Bianconi family, or in the beautiful, well-equipped kitchen of the Vespasia Restaurant. Your instructor for the week, Chef Flavio, gives classic Umbrian recipes a modern and delicious touch. He has worked in many prestigious restaurants around Italy, such as ‘Al Palazzo,’ (one Michelin star), ‘I Vechhi Tempi,’ and ‘La Frasca,’ (two Michelin stars), and has had many years of experience as a culinary teacher.
